filled sugar cookies

I think this was from my mother's "Home and Garden" Cookbook Encyclopedia. It's the first cookie I learned to bake at age 9...so for over 50 years, it's still my favorite.

yield Makes 2 dozen

Ingredients

  • 2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 stick sweet cream butter
  • 1 cup sugar
  • 1 - egg
  • 1 tablespoon milk
  • FILLING
  • 3 teaspoons lemon juice
  • 1/4 cup water
  • 3 teaspoons cornstarch
  • 1 cup chopped dates
  • 1/2 cup sugar
  • 2 teaspoons lemon rind
  • 1/2 cup chopped nuts

How To Make filled sugar cookies

  • Step 1
    Cill cookie dough for 1 hour. Roll to 1/8 inch thickness. Cut 2 for each cookie; fill centers only. Cover with 2nd cut-out, seal with fork around the edges
  • Step 2
    Bake at 375 for 10-15 minutes. Can also be filled with jelly or mincemeat.
  • Step 3
    Excellent!!
