This was my grandmother's recipe that she made for the hollidays. It's a family favorite. It takes a little time to assemble but worth it.

Ingredients

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 cup shortening
  • 2 - eggs
  • 1/2 cup milk
  • 3 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • opt. pinch nutmeg or cinnamon
  • 1 pound raisins
  • 1 pound dates, pitted
  • 1 cup granulated sugar
  • 1 cup water
  • 1 cup finely diced walnuts

How To Make filled cookies

  • Step 1
    Make the cookie dough and refrigerate several hours or overnight.
  • Step 2
    Filling: Grind the raisins and dates and add to sugar and water and bring to a boil then reduce heat to simmer and cook until thickened, stiring frequently.
  • Step 3
    Stir in nuts after mixture is cooked.
  • Step 4
    Preheat oven to 375 degrees.
  • Step 5
    Roll out cookie dough on floured table and cut into circles about 3-31/2".
  • Step 6
    Put a generous teaspoon of the filling in the center of one of the circles and cover with another circle. Seal cookies by using a fork around the cookie.
  • Step 7
    Bake at 375 degrees for 10-12 minutes or until browned.
