This was my grandmother's recipe that she made for the hollidays. It's a family favorite. It takes a little time to assemble but worth it.

Ingredients

  • 1 c
    brown sugar
  • 1/2 c
    granulated sugar
  • 1 c
    shortening
  • 2
    eggs
  • 1/2 c
    milk
  • 3 c
    all purpose flour
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1 tsp
    vanilla
  • opt. pinch
    nutmeg or cinnamon
  • 1 lb
    raisins
  • 1 lb
    dates, pitted
  • 1 c
    granulated sugar
  • 1 c
    water
  • 1 c
    finely diced walnuts

How to Make Filled Cookies

Step-by-Step

  1. Make the cookie dough and refrigerate several hours or overnight.
  2. Filling: Grind the raisins and dates and add to sugar and water and bring to a boil then reduce heat to simmer and cook until thickened, stiring frequently.
  3. Stir in nuts after mixture is cooked.
  4. Preheat oven to 375 degrees.
  5. Roll out cookie dough on floured table and cut into circles about 3-31/2".
  6. Put a generous teaspoon of the filling in the center of one of the circles and cover with another circle. Seal cookies by using a fork around the cookie.
  7. Bake at 375 degrees for 10-12 minutes or until browned.
