This recipe came from my Aunt Thelma, but when it was put in my mom's recipe book, it was not complete. I am going to be talking to my Aunt, and find out everything for sure, especially about the mint part, and will edit this recipe so that there is mint and better instructions.

Ingredients
- FILLING:
- 6 ounces chocolate chips
- 1/2 cup powdered sugar
- 1/3 cup chopped almonds
- COOKIE:
- 3 cups all purpose flour
- 1 1/2 sticks butter, softened
- 2 teaspoons vanilla extract
- 1/2 to 3/4 cups powdered sugar
How To Make filled chocolate mint cookies

Step 1Filling: Melt or microwave until melted. Then set aside until thick enough to shape into 3/4 inch balls.

Step 2Cookie: Shape into 11 inch log and refrigerate. Cut into 1/4 inch slices and shape slice around each ball. Refrigerate while heating oven. (Note: according to what I have in my recipe book, there were no instructions about baking) Bake at 350 degrees for 10-12 minutes or until lightly brown.
