I love rugelach and so does my family! It's a Jewish favorite pastry. Don't late the Italian last name fool you-I'm a coverted Catholic but used to be Jewish so all the Jewish favorites are still favorites with my family. These are easy and so good!

Ingredients
- PASTRY
- 3 cups all purpose flour
- 1 - package yeast
- 1/2 pound butter, unsalted
- 3 - egg yolks
- 1 cup sour cream
- FILLING
- 1 1/2 cups granulated sugar
- 1 1/2 teaspoons ground cinnamon
- 5-6 ounces finely chopped almonds
- - raisins
How To Make favorite rugelach

Step 1PLace flour in a large bowl. Sprinkle yeast over flour. Cut butter into flour mixture and mix by hand. In a separate bowl combine egg yolks and sour cream. Add to flour mixture, mix well. Gather into a large ball and wrap in wax paper. Refrigerate OVERNIGHT!

Step 2Divide dough into 5 portions. Roll each portion into a circle about 1/8 inch thick. Sprinkle filling on each section. Cut into 16 triangles and sprinkle each triangle with a few raisins. Roll up from wide end. Bake for 15 minutes at 350 degrees.

Step 3Feel free to use different nuts or spread with raspberry or apricot jam before the filling or use mini chocolate chips!
