This is a great cookie for the holiday's because of the color the cherries give the cookies.The cherries give the cookies a nice blend of sweetness without being too sweet.

Ingredients

  • 1 c
    packed brown sugar
  • 3/4 c
    shortening
  • 1
    egg
  • 1 tsp
    vanilla
  • 1/2 c
    chopped pecans
  • 1/4 c
    chopped maraschino cherries
  • 2 c
    sifted all-purpose flour
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    cream of tartar
  • 1/2 tsp
    salt

How to Make Fancy Cherry-Pecan Cookies

Step-by-Step

  1. Beat brown sugar, shortening, egg, and vanilla in a large bowl with electric mixer at medium speed until fluffy. Stir in pecans and cherries.
  2. Sift together flour, baking soda, cream of tartar, and salt in medium bowl, add by 1/2 cupsful to shorteding mixture, beating well after each addition.
  3. Divide dough in half. Place on sheet of waxed paper, shape into a log. refrigerate until firm.
  4. Preheat oven to 400 degrees, cut dough into 1/8" thick slices. Place on a ungreased cookie sheet. Bake 6-8 minutes or until golden brown . Cool 1-2 minutes on cookie sheet . Remove to wire rack , cool completely.
