If you love love espresso as much as I do, the one word for these cookies is "YUM".

Ingredients

  • 11/2 cups all purpose flour
  • 1/2 cup cocoa
  • 1 tablespoon instant espresso coffee
  • 1 cup butter, room temp
  • 1 teaspoon vanilla
  • 3/4 cup confectioners sugar
  • 2 eggs

How To Make espresso cookies

  • Step 1
    Preheat oven to 350. Sift flour, cocoa and espress, set aside
  • Step 2
    In a bowl cream butter, confectioners sugar, vanilla and eggs. Add flour little at a time, scraping down the sides.
  • Step 3
    Roll about 2 tablespoons of dough into a ball and place on cookie sheet about 2 inches apart. After sheet is filled, using a fork press into dough. Bake about 12-15 minutes, should be firm. Cool on rack
