Ingredients
- 11/2 cups all purpose flour
- 1/2 cup cocoa
- 1 tablespoon instant espresso coffee
- 1 cup butter, room temp
- 1 teaspoon vanilla
- 3/4 cup confectioners sugar
- 2 eggs
How To Make espresso cookies

Step 1Preheat oven to 350. Sift flour, cocoa and espress, set aside

Step 2In a bowl cream butter, confectioners sugar, vanilla and eggs. Add flour little at a time, scraping down the sides.

Step 3Roll about 2 tablespoons of dough into a ball and place on cookie sheet about 2 inches apart. After sheet is filled, using a fork press into dough. Bake about 12-15 minutes, should be firm. Cool on rack
