If you love love espresso as much as I do, the one word for these cookies is "YUM".

Ingredients

  • 11/2 c
    all purpose flour
  • 1/2 c
    cocoa
  • 1 Tbsp
    instant espresso coffee
  • 1 c
    butter, room temp
  • 1 tsp
    vanilla
  • 3/4 c
    confectioners sugar
  • 2
    eggs

How to Make Espresso Cookies

Step-by-Step

  1. Preheat oven to 350.
    Sift flour, cocoa and espress, set aside
  2. In a bowl cream butter, confectioners sugar, vanilla and eggs. Add flour little at a time, scraping down the sides.
  3. Roll about 2 tablespoons of dough into a ball and place on cookie sheet about 2 inches apart. After sheet is filled, using a fork press into dough.
    Bake about 12-15 minutes, should be firm. Cool on rack
