easy oatmeal cookies

I discovered this recipe in 1980, the same year that Pop started growing his beard. I remember making them for the first time when this major change came to my sweetheart. The recipe is on page 105 of the 1980 Southern Living Cookbook. It's one of Pop's favorite cookies!

Ingredients
- 1 1/4 cups sifted all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 cup solid crisco
- 1 cup brown sugar, firmly packed
- 1 cup granulated sugar
- 2 - eggs
- 1/2 teaspoon vanilla extract
- 3 cups quick-cooking oats
- 1/2 cup chopped pecans
How To Make easy oatmeal cookies

Step 1Sift together flour, soda, salt, and cinnamon. Set aside.

Step 2Cream Crisco, both sugars, eggs, and vanilla.

Step 3Add flour mixture to shortening mixture and mix well.

Step 4Add oats, then pecans.

Step 5Roll into small balls (about the size of a walnut) and place 1 inch apart on ungreased cookie sheet. Bake at 350 for 12 to 15 minutes. Cool on wire racks.
