easter...happy "sparkle" chick cookies
I am very happy to share this short cut Easter cookie recipe with you. I cut this out of a magazine, a few years back. It is a keeper. Kids and adults will love these super-cute cookies that start with refrigerator dough and finish with edible glitter! They positively SPARKLE, with glad tidings!! Ingredients
- 1 package refrigerator cookie dough
- 4 teaspoons grated orange zest
- 2/3 cup flour
- 6-7 tablespoons warm water
- 3/4 teaspoon vanilla
- 1 package 16 oz. confectioners sugar
- 2 tablespoons meringue powder
- - orange & yellow food coloring
- - yellow edible glitter, such as wiltons cake sparkle
- 1 - tube black decorating icing fitted with a writing tip

Step 1Knead flour and zest into dough. Roll out dough to a scant 1/4 inch thickness. Using a chick shaped cookie cutter cut out shapes. Place on ungreased baking sheets.Freeze for 10 minutes.

Step 2Preheat oven to 350F. bake cookies 7-9 minutes. Cool 1 minute. Transfer to wire racks.Cool completely. Combine warm water and vanilla. In a medium bowl combine confectioners sugar & meringue powder, add water mixture. At a low speed beat until soft peaks form, about 8 minutes., adding additional drops of water if necessary.

Step 3Tint 1/3 cup of icing yellow. Transfer this to a plastic food storage bags. Snip 1 corner from each bag. Pipe cookies with yellow icing, sprinkle with glitter. Set aside until set, 15 minutes. Decorate with black and orange icings.
