easiest lemon cookies
I'm not sure where I got this recipe, but something tells me it was on the side of the cake box. Extremely easy to make and they look beautiful. And of course, they are very tasty too. Especially if you love lemon.

Ingredients
- 1 box lemon cake mix (i used dh lemon supreme)
- 2 large eggs
- 1/3 cup vegetable oil
- 1 teaspoon lemon extract
- - i add about 2 tsp. fresh lemon juice and a couple of pinches of lemon zest (if you don't have fresh lemons ignore this step)
- - confectioners' sugar

Step 1Preheat oven to 375 degrees

Step 2Pour cake mix into a large bowl. Stir in eggs, oil and lemon exract. Blend together until no dry particles are visible. Batter will be very dense.

Step 3Drop teaspoonfuls of dough into a bowl of confectioners' sugar. Roll dough around until they are lightly covered. Once sugared, place on an ungreased cookie sheet.

Step 4Bake for approximately 9 minutes. The bottoms will be light brown, the insides chewy and will seem undone when you touch them. Check the bottoms.

Step 5Cool them on a wire rack.
