I found my recipe for these. I had forgotten about them. They are delish and have a nutty, buttery flavor. I call them lace cookies as they are thin and delicate and pretty! Keep a watchful eye on oven once they start caramalizing! Enjoy these!

Ingredients

  • 1/2 cup butter or margarine
  • 1 1/2 cups oats, quick cook
  • 1 - egg
  • 2/3 cup sugar, granulated
  • 1 tablespoon baking powder
  • 1 tablespoon all-pupose flour
  • 1 tablespoon orange peel, grated or zest

How To Make drema's "oatmeal lace " cookies

  • Step 1
Melt butter in small sauce pan. Add rolled oats and stir until well coated.
  • Step 2
In small mixing bowl beat egg well, add sugar and beat until light and smooth. Add baking pwder and flour to egg mixture. Stir well. Add into the oat mixture. Stir in orange zest.
  • Step 3
Preheat oven to 350 degrees F. Grease a large cookie sheet. Dust with flour. Drop batter, 1/2 tablespoon at a time onto cookie sheet - aboaut 3 inches aparat. Bake at 350 degrees F about 8 - 10 minutes. Allow to cool about 1 minute - remove from sheet onto cooling racks. When cool these cookies harden and become crisp. When completly cooled store in airtight containers.
  • Step 4
Tip or Option: Before cookies thoroughly cool, you may "curl" them around some thin or thick object. (You may remember these cookies as I have seen them curled in bakeries almost like cheese straws - so you can get creative but has to be done before they cool or harden))
