dreamy blueberry meringues

We all know those meringue cookies, right? Since I have blueberry bushes which reward us with delicious berries, I thought why not make meringue cookies with them! These are so good I dream about them and that's how the name came about! Everyone loves them and it's a good way to use the blueberries!

Ingredients For dreamy blueberry meringues

    egg whites, room temperature
  • 1/2 tsp
    cream of tartar
  • 1/2 c
  • 1 c
    fresh blueberries, washed and dried

How To Make dreamy blueberry meringues

    In a large bowl, beat egg whites and cream of tartar on high until whites are foamy.

    Slowly add sugar and beat on high until whites are very stiff and glossy.

    Gently fold in blueberries.

    Drop meringues by the spoonful onto a parchment lined cookie sheet about 2-inches apart.

    Bake in a preheated 275 degree oven about 35-40 minutes or until firm to the touch, but not brown. Ovens vary.

    Very, turn off oven. Leave meringues in the oven and do NOT open the oven door for about 30 minutes until cool.
