double chocolate peanut butter cookies
This is my spin on the traditional peanut butter blossoms recipe. I love those cookies and wanted to enhance them. From the reviews from my family and close friends, I have succeeded. Three amazing flavors... peanut butter, semi-sweet chocolate, and white chocolate. That spells "YUM" in our book!

You won't believe how much flavor these double chocolate peanut butter cookies pack. Didi has added her twist to peanut butter blossoms. The cookie has bits of nuts from the crunchy peanut butter. When hot, chocolate chips are placed on top of the cookie so they melt a little bit. A sweet and creamy white chocolate buttercream is piped over the chocolate chips. When you take a bite, the hidden chocolate is a welcoming surprise. Easy to make, these aren't your average peanut butter cookies.
Ingredients
- COOKIE
- 2 cups chunky peanut butter
- 2 cups granulated sugar
- 2 large eggs
- 2 teaspoons baking powder
- 2 teaspoons vanilla extract
- 3/4 cup semi-sweet chocolate chips
- BUTTERCREAM FROSTING
- 12 ounces white chocolate chips
- 2 sticks butter
- 1 cup confectioners' sugar
- 1 teaspoon vanilla extract
How To Make double chocolate peanut butter cookies

Step 1Preheat oven to 350 degrees F. Mix peanut butter, granulated sugar, eggs, baking powder, and vanilla extract until thoroughly incorporated and soft dough forms.

Step 2Roll into balls and place onto a non-stick sprayed cookie sheet. Using your fork tines, make crisscross patterns on top of the cookies, flattening them a little.

Step 3Bake for 10-11 minutes.

Step 4Remove to cookie rack and immediately place 3 chocolate chips on top of cookies towards the center. Continue with the rest of the cookies until all dough has been used.

Step 5Prepare your white chocolate buttercream by adding your chocolate chips to a glass bowl. Microwave on high at 10-15 second intervals stirring thoroughly in between, until chocolate has melted and is smooth. Set aside.

Step 6In a bowl add softened butter, confectioners' sugar, and vanilla extract. Mix thoroughly. Add melted white chocolate chips and continue to mix until the mixture is light and fluffy; about 2-3 minutes.

Step 7Add white chocolate buttercream frosting to a pastry bag or resealable plastic bag. Pipe the white chocolate cream ensuring you cover the semi-sweet chocolate chips underneath.
