  • 2 & 1/2 c
    chopped dates
  • 1 c
  • 1 c
  • 1 & 1/2 tsp
    lemon extract
  • 1 c
    chopped walnuts or pecans

  • 1 c
  • 2 c
    brown sugar
  • 3
    eggs, well beaten
  • 4 c
  • 1/2 tsp
    baking soda
  • 1/2 tsp

How to Make Date Pinwheel Cookies


  1. Mix filling ingrediants (except nuts) in saucepan, and cook until thick.
  2. Remove from heat, and add nuts; cool.
  3. Cream the shortening, sugar, and eggs. Add flour, soda, salt and mix. Chill dough for at least 30 minutes. Divide dough into two parts, and roll out,
  4. Spread cooked filling over dough.
  5. Roll up like a jelly roll. Chill overnight.
  6. Slice and bake in 350 degree oven for 10-12 minutes.
