These were so special and I have good memories of visiting my Aunt Doris when I was a child, and she made these. Other than my mom's kitchen, Aunt Doris's was my favorite kitchen to be in as she was a great baker. I remember her always wearing an apron, she was so neat, and I had fun whenever I was there. She had a green stand mixer which I was so impressed with.I always associate the place where I had a new food for the first time, and obviously I loved Aunt Doris and I loved these cookies and they're still a favorite of mine.

Ingredients

  • DOUGH INGREDIENTS:
  • 3 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup shortening
  • 2 cups light brown sugar
  • 2 medium eggs/not extra large
  • 1/2 cup water
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon cinnamon
  • FILLING:
  • 2 cups dates; chopped
  • 3/4 cup sugar
  • 3/4 cup water
  • 1/3 cup chopped nuts

How To Make date filled cookies

  • Step 1
    Grease a baking sheet. Preheat oven to 375 degrees.
  • Step 2
    Combine dry ingredients and sift. In a large bowl mix shortening, sugar and eggs. Add water and vanilla. Stir in the dry ingredients. This is a job for one of those nice stand mixers, as the dough is a bit stiff.
  • Step 3
    Make the filling: stir and cook until thick; add water if needed. I like to use a double boiler as it can stick and burn easily if you're not watching it constantly and stirring it.
  • Step 4
    Spoon the dough by teaspoonful onto cooky sheet. Top each with 1/2 teaspoonful of date filling. Then place another 1/2 teaspoonful of dough on top of that and seal. BAKE 10-12 MINUTES. Cool briefly on baking sheet and remove from baking sheet to a rack to cool completely. Store in airtight container.
