I love traditional shortbreads for tea time. Dark chocolate and butterscotch, who can resist!

I made these as pteradactyls, because we have 5 boys, and one on the way! And all boys love dinosaurs; mom and dad too!

Ingredients

  • 1 stick
    butter, diced
  • 1/2 c
    powdered sugar
  • 1 Tbsp
    vanilla
  • 1 3/4 c
    flour
  • 1/2 c
    corn starch
  • 1/4 tsp
    kosher salt
  • 1/2 c
    butterscotch chips, finely chopped
  • 1/2 c
    dark chocolate chips, finely chopped

How to Make Dark Chocolate Butterscotch Shortbread Cookies

Step-by-Step

  1. Cream butter and powdered sugar.
  2. Add in dry ingredients. Continue to beat until moist, sandy mixture.
  3. With hands, knead into dough form.
  4. Add finely chopped chips and knead together.
  5. Cover and refrigerate for an hour.
  6. Bake at 325 for about 10 minutes.
  7. Let sit for 2 minutes before moving to cooling rack.
