cry babies~ a molasses cookie
This is one of my Family Heirloom recipes, that my Norwegian Grandma was making at least as early as the 1920s, when my Mom was just a little girl. It is a cake-like cookie, that seems to get better as it sits.

Ingredients
- 1 cup shortening
- 1 cup sugar
- 2 eggs
- 1 cup molasses
- 5 cups flour, maybe a little less
- 2 teaspoons cinnamon
- 1 teaspoon ginger
- 1 teaspoon nutmeg
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 teaspoon vinegar
- 1 cup strong, hot coffee

Step 1Cream shortening and sugar until fluffy.

Step 2Mix in eggs.

Step 3Add spices, and 4 to 5 cups of flour, to make a very thick dough.

Step 4Mix in hot coffee and vinegar.

Step 5Drop by spoonfuls onto cookie sheet (I line with parchment).

Step 6Bake at 375 degrees for 10-12 minutes,
