crunchy reese's surprise cookie cups

Made these up on a trial run for a bake sale at my church. Both my boy's love peanuts, peanut butter, & chocolate, so I figured why not combine all of them. The surprise is when you bite into the cup to find a mini Reese's hidden inside. =) They were a success! Hope you and your family will enjoy them too!

Ingredients

  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 cup land o lakes real butter softened (2 sticks)
  • 1 tablespoon vanilla
  • 1 - egg
  • 2 1/4 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 pinch sea salt
  • 1 1/2 cups crushed honey roasted peanuts
  • 1 package hershey's semi-sweet chocolate chips
  • 1 package reese's peanut butter chips
  • 2 packages reese's cups mini's (found in the checkout isle)
  • - optional muffin cups if you don't have silicone cups.

How To Make crunchy reese's surprise cookie cups

  • Step 1
    Sift flour, sugar, sea salt, & baking powder in a large bowl.
  • Step 2
    Add in Brown sugar, softened butter, vanilla, & egg. Mix!
  • Step 3
    Add in package of Hershey's semi-sweet chocolate chips. Mix!
  • Step 4
    Line Muffin pan with either your silicone cups or paper muffin cups. If using paper, spray each cup with oil.
  • Step 5
    Scoop a tablespoon full of batter and roll into a ball. Drop into a cup.
  • Step 6
    Bake cookies for 15 minutes or until slightly soft in the middle and light brown on top.
  • Step 7
    While cookie's are baking, melt the Reese's Peanut Butter Chips in a bowl in the microwave. Add in a 1/4 Teaspoon of butter to help make it smooth. Stir every 10 seconds.
  • Step 8
    Push a mini Reese's cup into the middle of each cookie, leaving a shallow indentation.
  • Step 9
    After the cookies have cooled for a few minutes, use a spoon or icing knife to smear the melted Reese's chips on top of the cookie.
  • Step 10
    Sprinkle crushed Honey Roasted Peanuts on top of the melted Reese's chips. Let cool for a hour or until the Reese's on top has set up. Enjoy!!
