Crunchy Reese's Surprise Cookie Cups

Made these up on a trial run for a bake sale at my church. Both my boy's love peanuts, peanut butter, & chocolate, so I figured why not combine all of them. The surprise is when you bite into the cup to find a mini Reese's hidden inside. =) They were a success! Hope you and your family will enjoy them too!

Ingredients

  • 3/4 c
    granulated sugar
  • 3/4 c
    packed brown sugar
  • 1 c
    land o lakes real butter softened (2 sticks)
  • 1 Tbsp
    vanilla
  • 1
    egg
  • 2 1/4 c
    all purpose flour
  • 1 tsp
    baking powder
  • 1 pinch
    sea salt
  • 1 1/2 c
    crushed honey roasted peanuts
  • 1 pkg
    hershey's semi-sweet chocolate chips
  • 1 pkg
    reese's peanut butter chips
  • 2 pkg
    reese's cups mini's (found in the checkout isle)
  • ·
    optional muffin cups if you don't have silicone cups.

How to Make Crunchy Reese's Surprise Cookie Cups

Step-by-Step

  1. Sift flour, sugar, sea salt, & baking powder in a large bowl.
  2. Add in Brown sugar, softened butter, vanilla, & egg. Mix!
  3. Add in package of Hershey's semi-sweet chocolate chips. Mix!
  4. Line Muffin pan with either your silicone cups or paper muffin cups. If using paper, spray each cup with oil.
  5. Scoop a tablespoon full of batter and roll into a ball. Drop into a cup.
  6. Bake cookies for 15 minutes or until slightly soft in the middle and light brown on top.
  7. While cookie's are baking, melt the Reese's Peanut Butter Chips in a bowl in the microwave. Add in a 1/4 Teaspoon of butter to help make it smooth. Stir every 10 seconds.
  8. Push a mini Reese's cup into the middle of each cookie, leaving a shallow indentation.
  9. After the cookies have cooled for a few minutes, use a spoon or icing knife to smear the melted Reese's chips on top of the cookie.
  10. Sprinkle crushed Honey Roasted Peanuts on top of the melted Reese's chips. Let cool for a hour or until the Reese's on top has set up. Enjoy!!
