Absolutely Delicious! A friend of mine made these bite sized cookie's for me to take on a ladies weekend retreat to Mytrle Beach. They were such a huge hit with everyone I have to share her recipe with her blessing of course.You will even eat the crumbs at the bottom of the bag.

Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup light brown (packed) sugar
  • 1 - egg
  • 2/3 cup vegetable oil
  • 1 teaspoon vanilla
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup regular oats (old fashioned)
  • 1 cup corn flakes (crushed)
  • 1/2 cup flaked coconut
  • 1/2 cup nuts (pecan) chopped

How To Make crispy oat cookies

  • Step 1
    Preheat Oven 325.Cream butter and sugar and beat well(mixer). Add egg and beat. Add oil and vanilla and mix well; combine flour and soda, and add to cream mixture. Stir in oats, (crushed)corn flakes, coconut, and chopped nuts. Roll in one inch balls, Place on an ungreased cookie sheet; flatten with fork. Bake at 325 for 15 minutes. (Light golden color). Once cool place in a zip lock bag to keep freash. Makes 17 dozen.
