creamy lemon oatmeal bars
Threw these together in a hurry this morning so they would be nice and chilled for after supper. Creamy and refreshing!

Ingredients
- FILLING
- 1 can sweetened condensed milk (14 oz can)
- 1/2 cup lemon juice
- - zest of 2 lemons
- 1/2 cup sour cream
- CRUST
- 1 1/2 cups flour
- 1 cup rolled oats
- 1/2 cup butter, softened
- 1/2 cup brown sugar, packed
- 1/4 teaspoon salt
- 1/2 - 3/4 cups shredded coconut, toasted (optional)
How To Make creamy lemon oatmeal bars

Step 1Preheat oven to 375*.

Step 2Spray or grease 9" baking dish.

Step 3In a medium bowl mix together filling ingredients, stirring until thickened and no lumps.

Step 4In a separate bowl mix together crust ingredients until crumbly. Press half of the mixture into baking dish.

Step 5Spread filling mixture evenly over crust. Sprinkle the remaining crust mixture on the top.

Step 6Bake for 20 minutes, or until edges are golden brown. Cool and cut into bars. Refrigerate or freeze any leftovers.
