Threw these together in a hurry this morning so they would be nice and chilled for after supper. Creamy and refreshing!

These lemon oatmeal bars are perfectly sweet and creamy. The crust is crunchy and buttery. We added the toasted coconut and enjoyed the tropical twist it adds to the crust. A bit of the crust is sprinkled on top, and the crumble is a nice contrast to the creamy and tangy filling. This is a delicious and easy summertime dessert.

Ingredients

  • CRUST
  • 1 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 teaspoon salt
  • 1/2 - 3/4 cups shredded coconut, toasted (optional)
  • FILLING
  • 2 large lemons, zested
  • 1/2 cup lemon juice
  • 1 can sweetened condensed milk (14 oz)
  • 1/2 cup sour cream

How To Make creamy lemon oatmeal bars

We used a 9.5x7" pan when baking these. A 9x9" pan would also work.
  • Spray a baking dish while the oven preheats.
    Step 1
    Preheat oven to 375 degrees F. Spray or grease a 9" baking dish.
  • Combine crust ingredients and press half into the baking dish.
    Step 2
    In a bowl, mix together the crust ingredients until crumbly. Press half of the mixture into the baking dish.
  • Combine the filling ingredients.
    Step 3
    In another medium bowl, mix the filling ingredients, stirring until thickened, and no lumps remain.
  • Spread filling over the crust and sprinkle on the remaining crust crumbs.
    Step 4
    Spread filling mixture evenly over the crust. Sprinkle the remaining crust mixture on the top.
  • Bake for 20 minutes.
    Step 5
    Bake for 20 minutes or until edges are golden brown.
  • Creamy Lemon Oatmeal Bars in a pan ready to cut into squares.
    Step 6
    Cool and cut into bars. Refrigerate or freeze any leftovers.
