cream cheese sugar cookies

I got this recipe from my friend Joan several yrs ago. I have made this many times using cookie stamps and adding jam to the centers before cooking. I usually double the recipe and use a full 8 oz pkg of cream cheese and adding more flour as I roll them out to the right consistency.

Makes 6 dozen depending on size of stamp or cutter
Ingredients
- 1 cup sugar
- 1/2 teaspoon almond extract
- 1 cup butter, softened-no margarine
- 1/2 teaspoon vanilla
- 3 ounces cream cheese, room temperature
- 1 - egg yolk
- 1/2 teaspoon salt
- 2 cups all purpose flour
- - colored sugar or decorating icing, if desired
How To Make cream cheese sugar cookies

Step 1Combine all ingredients except flour. Beat until light and fluffy. Add flour, mixing well. Shape into 3 disks. Wrap dough in plastic wrap and refrigerate at least 1 hour.

Step 2Heat oven to 375. Roll out dough to 1/8" thickness, cut with lightly floured cutter or stamp. Lay 1" apart on ungreased cookie sheet.

Step 3Bake at 375 for 6-10 min. or light golden brown.

Step 4Immediately remove from cookie sheets to wire racks.

Step 5If desired, frost and decorate when cool.
