Crazy Rainbow Swirl Cookies

Janice Ross

I love baking and I love my grandchildren! I was trying to think of an idea for my reading day to my grandaughter's kindergarden class. All of a sudden I had this crazy idea, Rainbow cookies. I was reading the book The Rainbow Fish. I wanted this to be special and I wanted to try the cookies made with cake mix too. I looked online and found a way to make rainbow cookies by layering or making balls and putting it together. Well, I ended up just doing my own thing and came out with crazy rainbow swirl cookies!

  1. In a large mixing bowl pour in yellow cake mix, and all the ingredients except for the food coloring and sprinkles. Mix until you get a dough consistency. Squirt a little food coloring (all different colors) and swirl with a knife. Drop by spoonfuls onto greased cookie sheet. Sprinkle with sprinkles and bake at 375 degrees for 7-9 minutes.
  2. These would be cute in Christmas colors, School colors, or Mardi Gras colors. The kids enjoyed them and the adults liked them too!
