cranberry orange oatmeal cookies

I have already posted a cookie recipe with cranberry/orange, but these are oatmeal, instead of regular type cookie. These also use dried cranberries & cinnamon.

Ingredients

  • 1 cup butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 tablespoon grated orange zest
  • 1 teaspoon orange extract
  • 1 1/2 cups all-purpose flour or unbleached all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 3 cups rolled oats
  • 1 cup dried cranberries

How To Make cranberry orange oatmeal cookies

  • Step 1
    Preheat oven to 350°F.
  • Step 2
    In a large bowl, cream together butter and sugars, until smooth. Beat in the eggs, one at a time, then stir in vanilla, orange zest and orange extract.
  • Step 3
    Combine flour and next 2 items; stir, into butter mixture. Stir in oats and dried cranberries. Drop by rounded tablespoonsful, onto ungreased cookie sheets. (Parchment paper works good.)
  • Step 4
    Bake 10-12 minutes, in preheated oven, or until golden brown. Allow cookies to cool on baking sheet for 2 minutes, before removing to a wire rack to cool completely. Makes 48 servings (4 dozen).
