cranberry macadamia chip cookies

These are very Special Cookies. I will definitely include them on my Holiday Baking List. The three additions...Cranberries, Yogurt Chips, and Macadamia Nuts make them a Triple Threat. They are very pretty and have a firm but not hard texture. One cookie is very satisfying, as they are a rich and sweet thing. I hope you will include these on your Special List too!

Ingredients

  • 1 1/2 sticks butter, unsalted
  • 1 1/3 cups sugar
  • 1 large egg
  • 3/4 teaspoon kosher salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 2 1/4 cups all purpose flour
  • 2/3 cup dried cranberries
  • 2/3 cup yogurt chips or white chocolate chips
  • 3/4 cup macadamia nuts, about 5 oz., roughly chopped

How To Make cranberry macadamia chip cookies

  • Step 1
    In a large mixing bowl beat the butter with the sugar. Add the egg and mix well.
  • Step 2
    Add the salt, baking soda, baking powder, and vanilla. Stir to mix well.
  • Step 3
    Add the flour, cranberries, chips and nuts. Mix well.
  • Step 4
    Form 1.75 inch balls of dough and bake at 375 degrees on an ungreased cookie sheet for 11 minutes.
  • Step 5
    Remove from oven and cool 2 minutes before transferring to a rack to cool completely.
  • Step 6
    Store airtight. Makes 30 cookies.
