These are very Special Cookies. I will definitely include them on my Holiday Baking List. The three additions...Cranberries, Yogurt Chips, and Macadamia Nuts make them a Triple Threat. They are very pretty and have a firm but not hard texture. One cookie is very satisfying, as they are a rich and sweet thing. I hope you will include these on your Special List too!

Ingredients

  • 1 1/2 stick
    butter, unsalted
  • 1 1/3 c
    sugar
  • 1 large
    egg
  • 3/4 tsp
    kosher salt
  • 1 tsp
    baking soda
  • 1 tsp
    baking powder
  • 1 tsp
    vanilla
  • 2 1/4 c
    all purpose flour
  • 2/3 c
    dried cranberries
  • 2/3 c
    yogurt chips or white chocolate chips
  • 3/4 c
    macadamia nuts, about 5 oz., roughly chopped

How to Make Cranberry Macadamia Chip Cookies

Step-by-Step

  1. In a large mixing bowl beat the butter with the sugar. Add the egg and mix well.
  2. Add the salt, baking soda, baking powder, and vanilla. Stir to mix well.
  3. Add the flour, cranberries, chips and nuts. Mix well.
  4. Form 1.75 inch balls of dough and bake at 375 degrees on an ungreased cookie sheet for 11 minutes.
  5. Remove from oven and cool 2 minutes before transferring to a rack to cool completely.
  6. Store airtight. Makes 30 cookies.
