Ingredients
- 1 cup butter
- 3/4 cup white sugar
- 3/4 cup brown sugar, packed
- 2 large eggs, room temp
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 cup quick cooking oats
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup dried cranberries
- 3/4 cup chopped walnuts or pecans
How To Make cran-nut oatmeal cookies
-
Step 1Preheat oven to 350°F. Line baking sheets with parchment paper.
-
Step 2In a mixing bowl, cream butter and sugars until light and fluffy. Add eggs, one at a time. Add vanilla.
-
Step 3In a medium-size bowl, combine flour, oats, soda, salt and cinnamon. Slowly add the flour mixture to the creamed butter, mixing until flour is well incorporated.
-
Step 4Fold in cranberries and nuts. TIP: popping bowl into refrigerator for 1/2 hour or so will prevent the cookies from spreading too much!
-
Step 5With a medium cookie scoop, drop dough onto prepared baking sheets about 1 1/2 to 2 inches apart. Bake 10-12 minutes or until lightly golden. Let cool 5 minutes on baking sheet before transferring cookies to a cooling rack.
