~ cran-apple pecan cookies ~ so good!

I had one Northern Spy apple left, so I took one of my other recipes and experimented. What a wonderful combination. Bites of apple, nuts and cranberries. The addition of oatmeal makes makes them a bit chewy. We loved them! I'll be freezing what's left for the holidays. That's if there are any left...LOL

Ingredients

  • 1/2 cup each - softened butter, vegetable oil, sugar and packed brown sugar
  • 1 - egg
  • 1 teaspoon vanilla extract
  • pinch - cinnamon
  • 1 3/4 cups flour
  • 1/2 teaspoon each - baking powder, baking soda and salt
  • 1 cup oats - i think regular or old fashioned would work - i used quick cooking regular oats
  • 1/2 cup each - dried cranberries, chopped pecans
  • 1 - apple ( i used northern spy) any will do - peeled, cored and diced

How To Make ~ cran-apple pecan cookies ~ so good!

  • Step 1
    Preheat oven to 350 degree F. In a large bowl, cream together the butter, oil and sugars. In another bowl, mix together the flour, salt, baking powder, cinnamon and baking soda. Add this mixture to the creamed mixture a little at a time, until well blended. Fold in the oats, cranberries, nuts and apples.
  • Step 2
    Drop by heaping tablespoonfuls on an un-greased cookie sheet, about 2 inches apart. Bake for 10 - 12 minutes or until lightly browning on edges. I took mine out when they looked a little under cooked in center, yet brown around edges as this leaves them a little chewy.
  • Step 3
    Place cookies on cooling racks to finish cooling.
