cowboy oatmeal cookies
My mother-in-law gave me this recipe when I was dating her son. That was a LONG time ago! ha Sometimes I add about a cup and a half of chocolate chips and a cup of pecans to this recipe. This is a big request from the family.

Make about 3 doz.
Ingredients
- 2 cups shortening
- 2 cups brown sugar, firmly packed
- 2 cups sugar
- 4 - eggs
- 3 cups flour
- 1 teaspoon vanilla
- 3 cups oats, quick cooking or regular
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups coconut (optional but i use it)
How To Make cowboy oatmeal cookies

Step 1Mix shortening, sugars,then eggs.

Step 2Mix in separate bowl flour, oats, baking soda,and salt.

Step 3Slowly add the dry ingredients to the sugar mixture mixing as you add. Then add vanilla and coconut. (Two cups of coconut may be too much for your taste, but a little or a lot it goes GREAT in here!)

Step 4Drop heaping tablespoons of dough (or use cookie scoop) onto cookie sheet. I make them large size. Bake at 375* for 10 mins.
