My grandkids love these cookies!This is a very large cookie but could be made smaller if you want. Sometimes I put vanilla ice cream between them and I drizzle some dipping chocolate over them wrap in wax paper and freeze. These are the most asked for cookie at my house.

Ingredients

butter
1 1/2 c
sugar
1 1/2 c
brown sugar
3
eggs
1 Tbsp
vanilla extract
3 c
flour
1 Tbsp
baking powder
1 Tbsp
baking soda
1 tsp
salt
1 Tbsp
cinnamon
3 c
chocolate chips
3 c
oats
2 c
coconut (optional)
2 c
pecans, chopped

How to Make Cowboy Cookies

Step-by-Step

  • 1Cream butter and sugars
  • 2Add eggs and vanilla, beat well
  • 3Add dry ingredients until blended.
  • 4Stir in remaining ingredients.
  • 5Use ice cream scoop or 1/4 cup scoops of dough and put on cookie sheet 3" apart. Slightly flatten with your hands.
  • 6Bake at 350F for 10-12 minutes. Let sit for one minute before removing from cookie sheet. I let them cool on paper before bagging them in 1 gallon zip lock bags and freeze.
