cowboy cookies
My grandkids love these cookies!This is a very large cookie but could be made smaller if you want. Sometimes I put vanilla ice cream between them and I drizzle some dipping chocolate over them wrap in wax paper and freeze. These are the most asked for cookie at my house.

Makes about 3 dozen large cookies
Ingredients
- 3 sticks butter
- 1 1/2 cups sugar
- 1 1/2 cups brown sugar
- 3 - eggs
- 1 tablespoon vanilla extract
- 3 cups flour
- 1 tablespoon baking powder
- 1 tablespoon baking soda
- 1 teaspoon salt
- 1 tablespoon cinnamon
- 3 cups chocolate chips
- 3 cups oats
- 2 cups coconut (optional)
- 2 cups pecans, chopped
How To Make cowboy cookies

Step 1Cream butter and sugars

Step 2Add eggs and vanilla, beat well

Step 3Add dry ingredients until blended.

Step 4Stir in remaining ingredients.

Step 5Use ice cream scoop or 1/4 cup scoops of dough and put on cookie sheet 3" apart. Slightly flatten with your hands.

Step 6Bake at 350F for 10-12 minutes. Let sit for one minute before removing from cookie sheet. I let them cool on paper before bagging them in 1 gallon zip lock bags and freeze.
