My grandkids love these cookies!This is a very large cookie but could be made smaller if you want. Sometimes I put vanilla ice cream between them and I drizzle some dipping chocolate over them wrap in wax paper and freeze. These are the most asked for cookie at my house.

Ingredients

  • 3 sticks butter
  • 1 1/2 cups sugar
  • 1 1/2 cups brown sugar
  • 3 - eggs
  • 1 tablespoon vanilla extract
  • 3 cups flour
  • 1 tablespoon baking powder
  • 1 tablespoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon cinnamon
  • 3 cups chocolate chips
  • 3 cups oats
  • 2 cups coconut (optional)
  • 2 cups pecans, chopped

How To Make cowboy cookies

  • Step 1
    Cream butter and sugars
  • Step 2
    Add eggs and vanilla, beat well
  • Step 3
    Add dry ingredients until blended.
  • Step 4
    Stir in remaining ingredients.
  • Step 5
    Use ice cream scoop or 1/4 cup scoops of dough and put on cookie sheet 3" apart. Slightly flatten with your hands.
  • Step 6
    Bake at 350F for 10-12 minutes. Let sit for one minute before removing from cookie sheet. I let them cool on paper before bagging them in 1 gallon zip lock bags and freeze.
