My grandkids love these cookies!This is a very large cookie but could be made smaller if you want. Sometimes I put vanilla ice cream between them and I drizzle some dipping chocolate over them wrap in wax paper and freeze. These are the most asked for cookie at my house.

Ingredients

  • 3 stick
    butter
  • 1 1/2 c
    sugar
  • 1 1/2 c
    brown sugar
  • 3
    eggs
  • 1 Tbsp
    vanilla extract
  • 3 c
    flour
  • 1 Tbsp
    baking powder
  • 1 Tbsp
    baking soda
  • 1 tsp
    salt
  • 1 Tbsp
    cinnamon
  • 3 c
    chocolate chips
  • 3 c
    oats
  • 2 c
    coconut (optional)
  • 2 c
    pecans, chopped

How to Make Cowboy Cookies

Step-by-Step

  1. Cream butter and sugars
  2. Add eggs and vanilla, beat well
  3. Add dry ingredients until blended.
  4. Stir in remaining ingredients.
  5. Use ice cream scoop or 1/4 cup scoops of dough and put on cookie sheet 3" apart. Slightly flatten with your hands.
  6. Bake at 350F for 10-12 minutes. Let sit for one minute before removing from cookie sheet. I let them cool on paper before bagging them in 1 gallon zip lock bags and freeze.
