cowboy cookies (monster cookies)
I so love these cookies... They are my family's favorite. This recipe came from a cookbook that I have; but I "doctored" it up adding ingredients that I like. You can basically use whatever ingredients that you have on hand, ex: m & m's, butterscotch, white or regular chocolate chips, peanut butter chips etc. different kinds of nuts anything.... Chopped up candy bars, raisins etc... whatever it all works...use what you have. :)

Ingredients
- 3/4 cup butter, softened
- 1 cup sugar
- 1 cup brown sugar
- 2 - eggs
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 2 cups flour
- 2 cups old fashioned oats
- 1/2 cup each, choc chips, m&m's, butterscotch chips, chopped nuts,
- 1/2 cup peanut butter
- 1/2 cup shredded coconut
How To Make cowboy cookies (monster cookies)

Step 1Place butter & both sugars in large bowl, mix well with electric mixer. Add eggs, vanilla,peanut butter & salt mix well.

Step 2In another large bowl whisk the baking power & soda into the flour. Add the remaining ingredients to flour mixing well.

Step 3Add, dry ingredients to wet (I do this all at once cause I don't want to over work the gluten in the flour (but the recipe said to mix a little at a time.

Step 4Spray your baking sheet with cooking spray, and scoop out the dough (I use a cookie scoop). Press lightly down with slightly wet hands to make a slighty flatten cookie. Bake at 350 for 8-11 minutes or until golden brown. Cool for a couple of minutes then put on a rack or waxed paper to cool. Enjoy.
