I got this recipe from my step-wife (my kids step-mom) and it has been a favorite for years. I don't know where the name Cowboy Cookies came from, but that's the name I've always passed along with the recipe.

Ingredients
- 1 cup shortening
- 1 cup brown sugar, firmly packed
- 1 cup sugar
- 2 - eggs
- 1 teaspoon vanilla
- 1 teaspoon soda
- 1 teaspoon baking powder
- 2 cups all purpose flour
- 1 cup chocolate chips
- 2 cups old fashioned oats
- 1/2 cup chopped walnuts
How To Make cowboy cookies

Step 1Cream shortening, brown sugar and sugar together.

Step 2Add eggs and vanilla, blend well.

Step 3Sift soda, baking powder and flour together and add to mixture.

Step 4Add chocolate chips, oats and nuts. Mix well.

Step 5Dough will be thick and crumbly. Drop by teaspoonfuls on ungreased cookie sheet.

Step 6Bake 10-12 minutes at 350º or until golden brown.
