I got this recipe from my step-wife (my kids step-mom) and it has been a favorite for years. I don't know where the name Cowboy Cookies came from, but that's the name I've always passed along with the recipe.

Ingredients For cowboy cookies

  • 1 c
    shortening
  • 1 c
    brown sugar, firmly packed
  • 1 c
    sugar
  • 2
    eggs
  • 1 tsp
    vanilla
  • 1 tsp
    soda
  • 1 tsp
    baking powder
  • 2 c
    all purpose flour
  • 1 c
    chocolate chips
  • 2 c
    old fashioned oats
  • 1/2 c
    chopped walnuts

How To Make cowboy cookies

    Cream shortening, brown sugar and sugar together.

    Add eggs and vanilla, blend well.

    Sift soda, baking powder and flour together and add to mixture.

    Add chocolate chips, oats and nuts. Mix well.

    Dough will be thick and crumbly. Drop by teaspoonfuls on ungreased cookie sheet.

    Bake 10-12 minutes at 350º or until golden brown.
