An old cookie recipe, but good! The grocery store at one time made them, but I have not seen them is about ten years now.

Ingredients

  • 1 c
    shortening
  • 1 1/2 c
    brown sugar, firmly packed
  • 1/2 c
    white sugar
  • 2
    eggs
  • 1 1/2 tsp
    vanilla
  • 2 c
    flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 2 c
    quick cooking oatmeal
  • 2 c
    chocolate chips
  • 1 c
    coconut

How to Make COWBOY COOKIES

Step-by-Step

  1. Cream together shortening, brown sugar and white sugar. Add eggs and vanilla.
  2. Combine flour, baking soda and salt. Add to egg mixture.
  3. Stir in oatmeal, chocolate chips and coconut.
  4. Drop by spoon or cookie scoop onto cookie sheet. (I always bake cookies with parchment paper)
  5. Bake at 350 degrees for 10-12 minutes. Let set before moving to a cooling rack.
