An old cookie recipe, but good! The grocery store at one time made them, but I have not seen them is about ten years now.

Ingredients

  • 1 cup shortening
  • 1 1/2 cups brown sugar, firmly packed
  • 1/2 cup white sugar
  • 2 - eggs
  • 1 1/2 teaspoons vanilla
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups quick cooking oatmeal
  • 2 cups chocolate chips
  • 1 cup coconut

How To Make cowboy cookies

  • Step 1
    Cream together shortening, brown sugar and white sugar. Add eggs and vanilla.
  • Step 2
    Combine flour, baking soda and salt. Add to egg mixture.
  • Step 3
    Stir in oatmeal, chocolate chips and coconut.
  • Step 4
    Drop by spoon or cookie scoop onto cookie sheet. (I always bake cookies with parchment paper)
  • Step 5
    Bake at 350 degrees for 10-12 minutes. Let set before moving to a cooling rack.
