An old cookie recipe, but good! The grocery store at one time made them, but I have not seen them is about ten years now.

Ingredients
- 1 cup shortening
- 1 1/2 cups brown sugar, firmly packed
- 1/2 cup white sugar
- 2 - eggs
- 1 1/2 teaspoons vanilla
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups quick cooking oatmeal
- 2 cups chocolate chips
- 1 cup coconut
How To Make cowboy cookies

Step 1Cream together shortening, brown sugar and white sugar. Add eggs and vanilla.

Step 2Combine flour, baking soda and salt. Add to egg mixture.

Step 3Stir in oatmeal, chocolate chips and coconut.

Step 4Drop by spoon or cookie scoop onto cookie sheet. (I always bake cookies with parchment paper)

Step 5Bake at 350 degrees for 10-12 minutes. Let set before moving to a cooling rack.
