Exchanging postcards is another one of my hobbies. This recipe is from one of my postcards. I wanted to have the recipe--and try it--before I sent the card. The back of the card says the recipe is from JoAnne Bottoms of Eureka, Texas.

1 tsp
baking soda
1/2 tsp
salt
1 c
butter
1 1/2 c
brown sugar
1/2 c
sugar
1 pkg
chocolate chips
2
eggs
2 c
oats
1 1/2 tsp
vanilla
2 c
coconut

How to Make Cowboy Cookies

Step-by-Step

  • 1Cream butter and sugars together. Add vanilla and mix well.
  • 2Add eggs, flour, salt, and soda.
  • 3Add oats, coconut, and chocolate chips. Mix well.
  • 4Drop by tablespoon onto greased cookie sheet. Bake at 350 for 15 minutes.
