cowboy cookies
This is based on Laura Bush's favorite cookie recipe. It made a giant batch of large cookies, so I modified it a bit. I like to use a cookie scoop instead of teaspoons to keep the size even and got 2 1/2 dozen.

Ingredients
- 1 cup flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup butter, room temperature (1 stick)
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1 - egg
- 1 teaspoon vanilla
- 1 cup chocolate chips
- 1 cup old-fashioned rolled oats
- 3/4 cup flaked coconut
- 3/4 cup chopped pecans
How To Make cowboy cookies

Step 1Heat oven to 350ºF. Mix flour, baking powder, baking soda, cinnamon and salt in bowl.

Step 2In large bowl, beat butter with an electric mixer at medium speed until smooth and creamy. Gradually beat in sugars, combining thoroughly.

Step 3Beat in egg and vanilla.

Step 4Gradually add flour mixture until just combined. Stir in chocolate chips, oats, coconut and pecans.

Step 5Drop teaspoons of dough onto ungreased baking sheets. Bake for 12 to 15 minutes, until edges are lightly browned; rotate sheets halfway through. Let cookies cool on rack.
