This is based on Laura Bush's favorite cooky recipe. It made a giant batch of large cookies, so I modified it a bit. I like to use a cookie scoop instead of teaspoons to keep the size even.

Ingredients For cowboy cookies

  • 1 c
    flour
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1 tsp
    cinnamon
  • 1/4 tsp
    salt
  • 1/2 c
    butter, room temperature (1 stick)
  • 1/2 c
    granulated sugar
  • 1/2 c
    light brown sugar
  • 1
    egg
  • 1 tsp
    vanilla
  • 1 c
    chocolate chips
  • 1 c
    old-fashioned rolled oats
  • 3/4 c
    flaked coconut
  • 3/4 c
    chopped pecans

How To Make cowboy cookies

    Heat oven to 350ºF. Mix flour, baking powder, baking soda, cinnamon and salt in bowl.

    In large bowl, beat butter with an electric mixer at medium speed until smooth and creamy. Gradually beat in sugars, combining thoroughly.

    Beat in egg and vanilla.

    Gradually add flour mixture until just combined. Stir in chocolate chips, oats, coconut and pecans.

    Drop teaspoons of dough onto ungreased baking sheets. Bake for 12 to 15 minutes, until edges are lightly browned; rotate sheets halfway through. Let cookies cool on rack.
