These are really good, but have alot of sugar. My husband loves them. I like to dunk mine in my coffee or tea. I usually decrease the sugar. You can use sugar frosted flakes also just use less sugar with them. This recipe was given to me by my mother-in-law. She always makes these when company comes.

Ingredients

2 c
brown sugar, firmly packed
2 c
sugar
4
eggs
2 c
canola oil or vegetable
2 tsp
vanilla extract
4 c
all purpose flour
1 tsp
salt
2 tsp
baking soda
1 1/2 c
quick oats
4 c
cornflakes

How to Make CORNFLAKE COOKIES

Step-by-Step

  • 1Pre-heat oven to 325 degrees.
  • 2Mix together in large bowl both of the sugars, eggs (slightly beaten), oil, and vanilla until mix is blended well.
  • 3In another medium bowl combine the flour, salt, and soda. Mix this into the sugar mixture. Stir until mixed.
  • 4Stir in the oats. Then stir in the cornflakes. The cookie mixture will be a little hard to stir.
  • 5Drop by teaspoon about 2" apart. Bake 8 to 10 minutes, until they look slighty brown. Do not over bake or they'll be too hard.
  • 6This makes about 100 cookies.
