cornflake cookies

These are really good, but have alot of sugar. My husband loves them. I like to dunk mine in my coffee or tea. I usually decrease the sugar. You can use sugar frosted flakes also just use less sugar with them. This recipe was given to me by my mother-in-law. She always makes these when company comes.

Ingredients
- 2 cups brown sugar, firmly packed
- 2 cups sugar
- 4 - eggs
- 2 cups canola oil or vegetable
- 2 teaspoons vanilla extract
- 4 cups all purpose flour
- 1 teaspoon salt
- 2 teaspoons baking soda
- 1 1/2 cups quick oats
- 4 cups cornflakes
How To Make cornflake cookies

Step 1Pre-heat oven to 325 degrees.

Step 2Mix together in large bowl both of the sugars, eggs (slightly beaten), oil, and vanilla until mix is blended well.

Step 3In another medium bowl combine the flour, salt, and soda. Mix this into the sugar mixture. Stir until mixed.

Step 4Stir in the oats. Then stir in the cornflakes. The cookie mixture will be a little hard to stir.

Step 5Drop by teaspoon about 2" apart. Bake 8 to 10 minutes, until they look slighty brown. Do not over bake or they'll be too hard.

Step 6This makes about 100 cookies.
