Ingredients

  • FOR CHOCOLATE COOKIE DOUGH

  • 2 c
    all purpose flour
  • 1 1/2 c
    cocoa, unsweetened
  • 1 1/2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 3/4 c
    unsalted butter, room temp
  • 1 c
    brown sugar, firmly packed
  • 1/2 c
    sugar
  • 2
    eggs
  • 2 tsp
    vanilla extract
  • FOR CHOCOLATE CHIP COOKIE DOUGH

  • 1 c
    all purpose flour
  • 1/4 tsp
    baking soda
  • 1/4 tsp
    salt
  • 6 Tbsp
    unsalted butter, room temp
  • 1/2 c
    brown sugar, firmly packed
  • 1/4 c
    sugar
  • 1
    egg
  • 1 tsp
    vanilla extract
  • 3/4 c
    semi-sweet chocolate chips

How to Make Cookie Filled Chocolate Cookies

Step-by-Step

  1. Preheat oven to 350 degrees F. Prepare baking sheets with parchment paper
  2. To make the chocolate cookie dough: In a small bowl, whisk the flour, cocoa powder, baking soda and salt together. Set aside.
  3. In a large bowl, cream butter, brown sugar and sugar until thoroughly combined. Beat in eggs and vanilla. Add the flour mixture and beat until combined.
  4. To make the Chocolate chip cookie dough: In a small bowl, whisk together, flour, baking soda and salt together. Set aside.
  5. In a large bowl, cream the butter and sugars together until combined. Beat in eggs and vanilla. Add flour mixture and beat until just combined. Fold in chocolate chips.
  6. Using a small cookie scoop or spoon, scoop out 1 tablespoon of the chocolate cookie dough and flatten to a disc shape.
  7. Scoop just a tad less than a tablespoon of the chocolate chip cookie dough and roll into a ball. Place it on top of the chocolate dough.
  8. Wrap chocolate dough around the chocolate chip cookie dough, making sure that the ball is completely covering in the chocolate dough.
  9. Place cookie balls on the prepared baking sheet about 2 inches apart.
  10. Bake for 18-20 minutes until the edges are starting to harden and the centers are puffy, Leave on baking sheet for 2 minutes before transferring them to wire cooling rack. Allow cookies to completely cool before serving!
  11. The chocolate dough will be easier to work with if keep the dough chilled.
    Use Peanut Butter cookie dough instead of chocolate chip for a peanut-butter cup like cookie.
