Cookie Challenge: MoMo's - Chewy & Delish
I will baking and delivering to you, a new, unboring, cookie recipe every day until Christmas. Tall order, right? Wish me luck!
No chocolate chip, oatmeal raisin, or peanut butter cookies here. My challenge is to find something different to fill out the cookie tray selection but guaranteed to be so delicious that everyone looks sad when there are only crumbs remaining.
This one is a guaranteed pleaser. Crisp outside, chewy inside. A 1950s classic. Make them and know why it deserves the blue ribbon! (Love my photo I took complete with 50s china!)
2 call purpose flour
1 tspbaking powder
1/2 tspbaking soda
1 cgranulated sugar
1 cbrown sugar, packed
1 tspvanilla (always use pure if you can!)
2 cwheat flake cereal, crushed (once crushed it should equal 1 cup)
1 ccoconut, flaked
How to Make Cookie Challenge: MoMo's - Chewy & Delish
- Preheat oven to 350. In a medium mixing bowl, combine flour, baking soda, baking powder, and salt; set aside.
- In a large mixing bowl, beat shortening and both sugars with an electric mixer until they're combined. Beat in the eggs and vanilla. Beat in the flour mixture until just combined. Using a wooden spoon, stir in the crushed wheat flakes and coconut.
- Use a small cookie scoop or your hands to make 1 inch balls; place the balls 2 inches apart on the cookie sheet. Bake for 10 minutes or until just turning gold. Let the cookies cool on the tray for a minute before transferring them to a wire rack to cool.
- These cookies freeze very well!
