These oatmeal cookies get eaten up before they can cool. If you want a chunky oatmeal cookie, add 1 cup of any of the following: chocolate chips, raisins, chopped walnuts, chopped dates or shredded coconut. The original recipe came on the box of a grocery brand oat box but it has had a lot of "tweeking". Enjoy:)

Ingredients
- 1 cup brown sugar
- 1/2 cup sugar
- 3/4 cup vegetable oil
- 1/4 cup water
- 1 - egg
- 1 teaspoon good vanilla extract
- 3 cups rolled oats oatmeal
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 5 ounces chopped dates-optional
- 1 cup chopped pecans-optional
- 1/2 cup raisins-optional

Step 1Preheat oven to 350 degrees.

Step 2Lightly grease cookie sheets.

Step 3Beat sugars, shortening, water, egg, and vanilla until creamy.

Step 4Combine oats, flour, baking soda, and 1 teaspoon salt if desired.

Step 5Add oat mixture to vegetable oil mix; Add any additional goodies you like. i used 5 oz. chopped dates, 1 cup chopped pecans and 1/2 cup of raisins. Mix well.

Step 6Drop by rounded teaspoons onto prepared cookie sheet(s).

Step 7Bake 12 to 14 minutes or until light golden brown.

Step 8Let stand 1 minute before removing to racks to cool.
