connie's carrot cookies
When these cookies are in the oven, your house will smell heavenly!! The original recipe was found on the back of a Duncan Hines carrot cake mix. However, after following their recipe, I made a few tweeks. Makes 5 1/2 dozen. Enjoy!

Ingredients
- 1 package duncan hines decadent carrot cake mix
- 1 package carrot & raisins (included in cake mix) & 1/2 cup additional raisins if desired.
- 2 - eggs, room temperature
- 1/2 cup butter, softened
- 1 cup hot water (used to hydrate carrots and raisins)
- 1/2 cup oatmeal
- 1 cup chopped nuts (optional, i used walnuts)
- 1 teaspoon vanilla
- 1/2 cup additional raisins if you prefer
How To Make connie's carrot cookies

Step 1Preheat oven to 350 degrees.

Step 2Hydrate carrot and raisins in 1 cup of hot water. Allow to hydrate at least 5 minutes. Strain before adding to cake mix.

Step 3Beat butter and cake mix, then add eggs (one at a time) and vanilla to batter.

Step 4Add drained raisins and carrots to batter and mix.

Step 5Add nuts and oatmeal to batter and mix.

Step 6Spoon heaping teaspoon of batter onto lightly greased cookie sheets. Wet your fingers and press slightly on top of cookies to flatten.

Step 7Bake for 12 minutes at 350 degrees.

Step 8Remove cookies and cool on wire rack.
