When these cookies are in the oven, your house will smell heavenly!! The original recipe was found on the back of a Duncan Hines carrot cake mix. However, after following their recipe, I made a few tweeks. Makes 5 1/2 dozen. Enjoy!

Ingredients For connie's carrot cookies

  • 1 pkg
    duncan hines decadent carrot cake mix
  • 1 pkg
    carrot & raisins (included in cake mix) & 1/2 cup additional raisins if desired.
  • 2
    eggs, room temperature
  • 1/2 c
    butter, softened
  • 1 c
    hot water (used to hydrate carrots and raisins)
  • 1/2 c
    oatmeal
  • 1 c
    chopped nuts (optional, i used walnuts)
  • 1 tsp
    vanilla
  • 1/2 c
    additional raisins if you prefer

How To Make connie's carrot cookies

    Preheat oven to 350 degrees.

    Hydrate carrot and raisins in 1 cup of hot water. Allow to hydrate at least 5 minutes. Strain before adding to cake mix.

    Beat butter and cake mix, then add eggs (one at a time) and vanilla to batter.

    Add drained raisins and carrots to batter and mix.

    Add nuts and oatmeal to batter and mix.

    Spoon heaping teaspoon of batter onto lightly greased cookie sheets. Wet your fingers and press slightly on top of cookies to flatten.

    Bake for 12 minutes at 350 degrees.

    Remove cookies and cool on wire rack.
