When these cookies are in the oven, your house will smell heavenly!! The original recipe was found on the back of a Duncan Hines carrot cake mix. However, after following their recipe, I made a few tweeks. Makes 5 1/2 dozen. Enjoy!

Ingredients

  • 1 package duncan hines decadent carrot cake mix
  • 1 package carrot & raisins (included in cake mix) & 1/2 cup additional raisins if desired.
  • 2 - eggs, room temperature
  • 1/2 cup butter, softened
  • 1 cup hot water (used to hydrate carrots and raisins)
  • 1/2 cup oatmeal
  • 1 cup chopped nuts (optional, i used walnuts)
  • 1 teaspoon vanilla
  • 1/2 cup additional raisins if you prefer

How To Make connie's carrot cookies

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Hydrate carrot and raisins in 1 cup of hot water. Allow to hydrate at least 5 minutes. Strain before adding to cake mix.
  • Step 3
    Beat butter and cake mix, then add eggs (one at a time) and vanilla to batter.
  • Step 4
    Add drained raisins and carrots to batter and mix.
  • Step 5
    Add nuts and oatmeal to batter and mix.
  • Step 6
    Spoon heaping teaspoon of batter onto lightly greased cookie sheets. Wet your fingers and press slightly on top of cookies to flatten.
  • Step 7
    Bake for 12 minutes at 350 degrees.
  • Step 8
    Remove cookies and cool on wire rack.
  • Step 9
    Enjoy!
