John would love this. I want to try it with English breakfast tea instead of the coffee. Note: John loved coffee, but mine came out light colored cause I dont drink coffee so didn't brew strong. I liked it with the tea!

How To Make coffee and spice cookies, joann's

    Mix thoroughly: 1 c shortening 2 c brown sugar 2 eggs

    Then stir in 1/2 c cold coffee. (I used the donut shop blend in the keurig... large cup made over 1 cup coffee but I spilled measuring and still had 1 cup. Joanne says brew coffee extra strong like she does)

    Sift and stir in: 3 1/2 c flour 1 tsp soda 1 tsp salt 1 tsp nutmeg 1 tsp cinnamon

    Chill dough 1 hour. ( I refrigerated overnight)

    Drop by tsp on lightly greased cookie sheets. Bake at 400 degrees 8-10 minutes just until set.

    Note: do not bake on bottom rack at home, they burned.

    Note: I want to try making with English breakfast tea or chai tea, use 2 bags for strong.
