coconut thumprint cookies
I doubled this recipe. Can also roll in chopped nuts instead of coconut. Can use any jams or jellies .

Ingredients
- - half cup unsalted butter, room temp.
- - half cup sugar, one egg seperated
- - three quarters cup flour, quarter tsp. salt
- - quarter tsp. bk. powder, half tsp. vanilla
- - jam or jelly, shreded coconut
How To Make coconut thumprint cookies

Step 1preheat 375.cream butter, sugar, egg yolk only and vanilla. Add dry ingredients to this, blend well. Beat egg white till frothy . roll dough in ball dip in egg white and cover , roll in coconut. put on ungreased cookie sheet

Step 2press thumbprint in middle and put little jam etc. bake till golden on edges. Cool five minutes on cookie sheet then transfer to a rack.

Step 3I double the recipe since they are yummy and also freeze well...Enjoy
