1preheat 375.cream butter, sugar, egg yolk only and vanilla. Add dry ingredients to this, blend well. Beat egg white till frothy . roll dough in ball dip in egg white and cover , roll in coconut. put on ungreased cookie sheet
2press thumbprint in middle and put little jam etc. bake till golden on edges. Cool five minutes on cookie sheet then transfer to a rack.
3I double the recipe since they are yummy and also freeze well...Enjoy
