These are really good fruit bars , you can change the flavor of preserves to what ever you desire , I like to put apricot or strawberry filling as well.

Ingredients

1 c
all purpose flour
1 tsp
baking powder
1/2 c
butter or margarine
2 large
eggs
1 Tbsp
milk
1/2 c
raspberry jam
4 Tbsp
melted butter or margarine
2/3 c
sugar
2 c
flaked coconut
1 tsp
vanilla extract

How to Make Coconut Raspberry Bars

Step-by-Step

  • 1Mix the flour and baking powder together into a bowl ; add the butter and mix until its the consistency of cornmeal.
  • 2Stir in 1 of the eggs and the milk until a soft dough forms ; spread evenly into the bottom of a un-greased 8x8" sq. pan.
  • 3Spread the jam evenly over the top of the dough.
  • 4Stir together the remaining egg with the butter , sugar , coconut and vanilla ; spread on top of the jam.
  • 5Bake @ 350° for 30 minutes or until the top is lightly browned.
  • 6Cool and then cut into 1-1/2 to 2 " squares.
