coconut raspberry bars
These are really good fruit bars , you can change the flavor of preserves to what ever you desire , I like to put apricot or strawberry filling as well. picture is borrowed from the net to show you what they look like.

Ingredients
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1/2 cup butter or margarine
- 2 large eggs
- 1 tablespoon milk
- 1/2 cup raspberry jam
- 4 tablespoons melted butter or margarine
- 2/3 cup sugar
- 2 cups flaked coconut
- 1 teaspoon vanilla extract
How To Make coconut raspberry bars

Step 1Mix the flour and baking powder together into a bowl ; add the butter and mix until its the consistency of cornmeal.

Step 2Stir in 1 of the eggs and the milk until a soft dough forms ; spread evenly into the bottom of a un-greased 8x8" sq. pan.

Step 3Spread the jam evenly over the top of the dough.

Step 4Stir together the remaining egg with the butter , sugar , coconut and vanilla ; spread on top of the jam.

Step 5Bake @ 350° for 30 minutes or until the top is lightly browned.

Step 6Cool and then cut into 1-1/2 to 2 " squares.
