This is one from one of my grandmothers, Dorothy Wadkins. She baked these for a cookie swap that my mom and I threw a couple of years ago. Pretty simple but very tasty.
Blue Ribbon Recipe
These cookies are perfect for the coconut lover. They remind us of a cross between a buttery coconut cookie and a snickerdoodle. Rolling them in cinnamon sugar gives them a nice cinnamon flavor and mimics the snickerdoodle. Once baked, the outside is crisp, and the inside is soft and chewy. Make these coconut pecan cookies for any occasion.
Preheat oven to 350 degrees. Mix sugars, butter, and eggs.
Add vanilla and mix well.
Mix in flour.
Then add coconut and pecans; mix well.
Roll into walnut size balls and roll in cinnamon sugar.
Place cookies on a prepared cookie sheet.
Bake until lightly golden brown (11-13 minutes).
