coconut pecan cookies
This is one from one of my grandmothers, Dorothy Wadkins. She baked these for a cookie swap that my mom and I threw a couple of years ago. Pretty simple but very tasty.

These cookies are perfect for the coconut lover. They remind us of a cross between a buttery coconut cookie and a snickerdoodle. Rolling them in cinnamon sugar gives them a nice cinnamon flavor and mimics the snickerdoodle. Once baked, the outside is crisp, and the inside is soft and chewy. Make these coconut pecan cookies for any occasion.

Ingredients
- 1 cup brown sugar
- 1 cup white sugar
- 1 cup butter
- 1 cup shredded coconut
- 1 cup pecans, chopped
- 2 - eggs
- 2 1/2 cups all-purpose flour
- 1 teaspoon vanilla extract
- - cinnamon sugar
How To Make coconut pecan cookies

Step 1Preheat oven to 350 degrees. Mix sugars, butter, and eggs.

Step 2Add vanilla and mix well.

Step 3Mix in flour.

Step 4Then add coconut and pecans; mix well.

Step 5Roll into walnut size balls and roll in cinnamon sugar.

Step 6Place cookies on a prepared cookie sheet.

Step 7Bake until lightly golden brown (11-13 minutes).
