This is one from one of my grandmothers, Dorothy Wadkins. She baked these for a cookie swap that my mom and I threw a couple of years ago. Pretty simple but very tasty.
These cookies are perfect for the coconut lover. They remind us of a cross between a buttery coconut cookie and a snickerdoodle. Rolling them in cinnamon sugar gives them a nice cinnamon flavor and mimics the snickerdoodle. Once baked, the outside is crisp, and the inside is soft and chewy.
