coconut oatmeal cookies
These are delicious! The coconut adds a little something special.

Ingredients
- 1/2 cup butter (or shortening)
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 - egg
- 1/2 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup rolled oats
- 1/2 cup flaked coconut
- 1/2 cup chopped nuts (your favorite)
How To Make coconut oatmeal cookies

Step 1Preheat oven to 350°. Grease cookie sheets or use parchment paper or silpat.

Step 2Combine flour, baking powder, baking soda and salt and set aside.

Step 3In a large bowl cream together butter and white and brown sugars.

Step 4Mix in egg and vanilla.

Step 5Stir flour mixture into batter, blending well. Mix in oats, coconut and nuts.

Step 6Scoop by heaping tablespoonfuls onto prepared cookies sheets, placing 2 inches apart.

Step 7Bake for 12 - 18 minutes (depending on size of scoop and your oven. It took about 16 minutes in my oven.) until edges are lightly browned.
