2 large eggs, 1/2 of a cup of sugar 1/8 of a teaspoon of salt, 1 teaspoon of vanilla and 3 cups of coconut
How to Make Coconut Macaroon's
1In a large bowl, whisk the eggs until well beaten stir in sugar, salt and vanilla. Finally add the coconut, making sure that it is well coated.
2Place parchment paper on a cookie sheet and using a icecream scoop place a few inches apart and bake for 15 min. They will turn a light golden brown and that is when you know they are perfect.
3Cool cookies and for another idea you can melt some semi sweet chocolate and1/2 a cup of heavy cream, and dip the bottoms of the cookie.
4Heat cream in a sauce pan over medium heat, bring just to a boil and pour over chocolate. Allow to stand for 5 min, stir until smooth. Enjoy.
