coconut macaroons
The aroma of a coconut macaroon is so tantalizing, but the taste is even better. I have never met anyone who doesn't love a macaroon. Pass a plate of these after dinner with a scoop of vanilla bean ice cream or a fruit sorbet, and you'll top the evening off just right.

Ingredients
- 1 stick butter, unsalted, softened
- 1 cup sugar
- 1/2 teaspoon salt, or a scant less
- 3/4 teaspoon cream of tartar
- 1 teaspoon baking powder
- 2 large eggs
- 1 teaspoon vanilla
- 1 1/2 cups coconut, unsweetened
- 1 1/2 cups all purpose flour

Step 1Cream the butter with the sugar, salt, cream of tartar, and baking powder, in a large mixing bowl..

Step 2Add the eggs, one at a time, beating well.

Step 3Stir in the vanilla.

Step 4Stir in the coconut.

Step 5Stir in the flour.

Step 6Spoon 1 1/2 inch mounds of dough on a cookie sheet and bake in a 350 degree oven for 11 minutes.

Step 7Remove from the sheet with a spatula and cool completely on a rack.

Step 8Store airtight. Makes 28 cookies.
