Coconut Macaroons

The aroma of a coconut macaroon is so tantalizing, but the taste is even better. I have never met anyone who doesn't love a macaroon. Pass a plate of these after dinner with a scoop of vanilla bean ice cream or a fruit sorbet, and you'll top the evening off just right.

  • 1 stick
    butter, unsalted, softened
  • 1 c
  • 1/2 tsp
    salt, or a scant less
  • 3/4 tsp
    cream of tartar
  • 1 tsp
    baking powder
  • 2 large
  • 1 tsp
  • 1 1/2 c
    coconut, unsweetened
  • 1 1/2 c
    all purpose flour

How to Make Coconut Macaroons


  1. Cream the butter with the sugar, salt, cream of tartar, and baking powder, in a large mixing bowl..
  2. Add the eggs, one at a time, beating well.
  3. Stir in the vanilla.
  4. Stir in the coconut.
  5. Stir in the flour.
  6. Spoon 1 1/2 inch mounds of dough on a cookie sheet and bake in a 350 degree oven for 11 minutes.
  7. Remove from the sheet with a spatula and cool completely on a rack.
  8. Store airtight. Makes 28 cookies.
