Quick easy cookie. You can easily knock out a batch of these in under an hour. Crispy on the outside soft and chewy inside.

Ingredients

  • 1 package white cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large egg whites
  • 3/4 teaspoon almond extract
  • 2 - (14 ounce) pkgs sweetened flaked coconut

How To Make coconut macaroons

  • Step 1
    Place the cookie mix, water, oil, egg whites, and almond extract in a large bowl. Blend with an electric mixer set on medium speed for 2 minutes until blended. Stir in the coconut with a wooden spoon.
  • Step 2
    Drop the dough by tablespoonfuls onto prepared baking sheets. You can either slightly grease the pans or use parchment paper.
  • Step 3
    Oven should be preset to 350 degrees. Bake 12 to 14 minutes or until golden brown. Cool 1 minute on sheets, then remove cookies with spatula to wire racks to cool completely.
