Ingredients
- 1/2 cup butter (no substitutions), softened
- 2 cups powdered sugar
- 3 cups sweetened, flaked coconut (about 8 oz)
- 2 - squares semi-sweet chocolate
How To Make coconut joys

Step 1Soften butter, but do not melt. Beat in powdered sugar, then coconut.

Step 2Take rounded teaspoons, roll into balls and put on wax paper. Push a small dent into the tops with your finger.

Step 3Melt chocolate squares and fill dents with chocolate. Refrigerate.

Step 4*I like to pour melted chocolate into a ziploc bag with the corner snipped off to "pipe" the chocolate onto the cookies.
