coconut chip cookies
I found the recipe in the "Taste of Home - Quick Cooking" magazine more than 10 years ago. Except for the eggs and vegetable oil, all ingredients are changeable (yellow cake mix with toffee chips is fantastic!). If you have family members who dislike nuts or coconut, these items can be left out. The sample picture was made with cherry chips because I was out of chococate chips.

Ingredients
- 1 package white cake mix (18-1/4 oz)
- 2 - eggs
- 1/3 cup vegetable oil
- 1/2 cup chocolate chips
- 1/4 cup chopped nuts
- 1 cup coconut, flaked
How To Make coconut chip cookies

Step 1In mixing bowl, beat cake mix, eggs, and oil. Batter will be stiff.

Step 2Stir in all other ingredients.

Step 3Roll into 1-inch balls and place on lightly-greased cookie sheet.

Step 4Bake at 350 degrees for 10 minutes or until a slight indentation remains when lightly touched.

Step 5Cool for 2 minutes. Remove to wire rack and cool completely.
