Another Million dollar bar cookie. Chocolate and coconut, what more can you ask for. These taste fantastic. If you love Coconut bon bons of years past, your gonna love these. I cheated This recipe is with a pkg mix. Note: Prep time does not count chill time in refer.

Ingredients

  • COOKIE CRUST
  • 1 - pkg betty crocker double chocolate chunk cookie mix
  • 1/4 C - veg. oil
  • 2 TBS - water
  • COOKIE FILLING
  • 1/2 C - butter (1 stick) softened
  • 1 can (14oz) sweetened condensed milk
  • 1 Tsp - vanilla extract or maple extract
  • 6 C - pdr sgr
  • 1 1/2 C - coconut
  • 1/2 C - finely chopped pecans, or walnuts or almonds
  • TOPPING
  • 1/2 C - whipping cream
  • 1 - bag 12oz, choc chips (2 cups)
  • 1/2 C - butter, (not margarine)

How To Make "coconut bars"

  • Step 1
    Heat oven @ 350 Mix in large bowl all cookie crust ingredients, to form soft ball. Press into bottom of ungreased 9X13 pan. Bake 12 min. COOL COMPLETELY.
  • Step 2
    Meanwhile, in med bowl, Beat softened butter, milk,& Flavoring with electric mixer, on med speed til smooth. Gradually add Pdr sugar, blend till smooth. Stir in coconut, & nuts till well blended. Spread evenly over the cooled Cookie Crust. Cover and Chill 1 Hr or till filling is set.
  • Step 3
    In a Non-Stick pan, Heat topping Ingredients, over Med-low Heat.Stir constantly, till melted and smooth.
  • Step 4
    Pour topping over chilled coconut filling. Spread to cover well. Chill in refer 2 hrs, or till set.
  • Step 5
    Before cutting into bars, let stand 10 min at room temp. cut 9 rows by 4 bars. Store covered in refer. ENJOY these are YUMMMY!!!
