NEW MEXICO: Munch your way across the USA. Bennie Shaw, the state of New Mexico is now represented. This recipe is from "Capitol Cookies" with recipes from every state capital & Washington, DC. this recipe was submitted by Calvary Chapel de Santa Fe, Santa Fe, New Mexico, Maureen Nash, Chairperson. I personally have not made these so, Bennie, if you make these, let us know if they make your state proud.

Ingredients

  • 8 ounces cream cheese, softened
  • 1 stick butter, softened
  • 1 cup self-rising flour
  • - jam, any flavor
  • - powdered sugar
  • SELF-RISING FLOUR SUBSTITUTE:
  • 1 cup all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda (optional)

How To Make new mexico's clotchky (thumbprint cookies)

  • Step 1
    Whip together cream cheese and butter. Add flour. Roll dough into a long log and wrap in waxed paper. Chill until firm.
  • Step 2
    Slice into 1/4" slices. Put thumbprint in middle of each slice once slices are placed onto cookie sheet.
  • Step 3
    Spoon 1/2 teaspoon jam into thumbprint of each slice. Bake until golden in a 350-degree oven for 10 minutes. Cool. Sprinkle with sifted powdered sugar.
