New Mexico's Clotchky (Thumbprint Cookies)
8 ozcream cheese, softened
1 stickbutter, softened
1 cself-rising flour
·jam, any flavor
SELF-RISING FLOUR SUBSTITUTE:
1 call purpose flour
1 1/2 tspbaking powder
1/4 tspbaking soda (optional)
How to Make New Mexico's Clotchky (Thumbprint Cookies)
- Whip together cream cheese and butter. Add flour. Roll dough into a long log and wrap in waxed paper. Chill until firm.
- Slice into 1/4" slices. Put thumbprint in middle of each slice once slices are placed onto cookie sheet.
- Spoon 1/2 teaspoon jam into thumbprint of each slice. Bake until golden in a 350-degree oven for 10 minutes. Cool. Sprinkle with sifted powdered sugar.
