claire's whoopie pies

This recipe was given to me by my neighbor Claire when I lived in Framingham, Massachusetts, in 1972. I had never heard of Whoopie Pies, but I fell in love with these. If you're concerned about the raw egg whites in the frosting, buy pastuerized egg whites. I've been making this recipe as is since 1972 and no one has ever become ill from eating them. The recipe is written just as it is on my very well-worn recipe card.

Ingredients
- COOKIES
- 1/2 cup vegetable shortening
- 1 cup sugar
- 2 - egg yolks
- 1 cup whole milk
- 2 cups flour
- 5 tablespoons cocoa
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 teaspoons vanilla
- FILLING
- 2 - egg whites
- 2 cups conf sugar
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 1/2 cup vegetable shortening
How To Make claire's whoopie pies

Step 1Sift dry ingredients together.

Step 2Add rest of ingredients and mix until smooth and well blended.

Step 3Drop tsp on UNGREASED cookie sheets.

Step 4Bake 10-12 min 375 until set but not crisp.

Step 5When cool put together sandwich style.

Step 6While cookies are baking, beat the filling ingredients together until fluffy.
