This recipe was given to me by my neighbor Claire when I lived in Framingham, Massachusetts, in 1972. I had never heard of Whoopie Pies, but I fell in love with these. If you're concerned about the raw egg whites in the frosting, buy pastuerized egg whites. I've been making this recipe as is since 1972 and no one has ever become ill from eating them. The recipe is written just as it is on my very well-worn recipe card.

  • 1/2 c
    vegetable shortening
  • 1 c
  • 2
    egg yolks
  • 1 c
    whole milk
  • 2 c
  • 5 Tbsp
  • 1 tsp
    baking soda
  • 1 tsp
    baking powder
  • 1/2 tsp
  • 1 1/2 tsp

  • 2
    egg whites
  • 2 c
    conf sugar
  • 1 tsp
  • 1/4 tsp
  • 1/2 c
    vegetable shortening

How to Make Claire's Whoopie Pies


  1. Sift dry ingredients together.
  2. Add rest of ingredients and mix until smooth and well blended.
  3. Drop tsp on UNGREASED cookie sheets.
  4. Bake 10-12 min 375 until set but not crisp.
  5. When cool put together sandwich style.
  6. While cookies are baking, beat the filling ingredients together until fluffy.
